Low GI Week 1

Saturday, May 05, 2012

I've been jumping into a low GI diet over the past week. It has really helped me to look at foods that are best processed by my body, which is essential with PCOS and insulin resistance. I am down 3 pounds!!! This week has been chaos so I'm hoping to see more progress next week as I work on incorporating more exercise. I can do this. I want to be a mother and whether the Lord blesses us by allowing us to get pregnant or adopting, I'll be better for it :)

At this point, I have not been told that I am going to lose my teaching position for the fall. While this is good, we are all still on edge. We won't feel "safe" until we have our contracts signed and turned in. As these last couple weeks fo school roll on, please continue to pray that the Lord's will be done.

I happy that the new eating habits are helping you so much. 3 lbs is amazing! I still haven't gotten to the library to look for the Low GI book, but hopefully I can find a few mins this week. Keep up the great work!
