I`ve been having such fun trying indian recipes this week. I finally just ordered some harder to find spices and dried legumes off the internet (not that expensive at all) which includeds Amchoor powder, grounded green unripe mango powder.
Using this I made an eggplant curry, and with the amchoor powder gave it a tartness almost like a pickle. Really nice.
Here`s the reciepe I adapted here, using yogurt instead of cream and whey in the original recipe, and reducing the oil.
Got the next few days off so looking forward to trying out some new legume and vegetable recepies!
