Healthy Recipe Series - Vol. 14 - Summer Squash & White Bean Salad

This is more a side dish than a main course - I made the full recipe and divided into (5) 3/4 cup servings individually so that is what my nutrition info is based on. Yummy, filling & refreshing!

1 T extra virgin olive oil
4 mini onions
2 T minced garlic
1 medium zucchini, halved lengthwise and sliced
1 medium yellow summer squash, ditto above
1 t dried oregano
1/4 t salt
1/4 t pepper
15.5 oz great northern beans
2 plum tomatoes, chopped
1 T red wine vinegar
1/3 cup Parmesan

Heat oil in large non-stick skillet over medium heat. Add onion and garlic and cook, stirring, until beginning to soften, about 3 min. Add zucchini, summer squash, oregano, salt & pepper and stir to combine. Reduce heat to low, cover and cook, stirring once, until veggies are tender-crisp - 3-5 min.

Stir in beans, tomatoes and vinegar; increase heat to medium and cook, stirring, until heated through, about 2 minutes. Remove from the heat in stir in parmesan.
