Holy guacamole!

So I'm obsessed.

I tolerated this lovely green dip/condiment for the past few years, but didn't "like it".

I went to Mexico in February and ate it a few times, started to get a taste for it.

This past 2 weeks, I've turned into a guacamole freak!!!

To quote the lady from the Frank's Red Hot commercials:

"I put that s*** on everything!"

I live in an area where good avocados are definitely not native, and are usually not the best quality at the supermarket.

I've been frequenting the weekend Farmers Market (I typically get farm fresh tomatoes, cucumber, carrots, spaghetti squash, apples, cheese, gelato, chocolate milk, bakery bread - a treat!) and I'm trying to get the majority of our groceries there.

I happened upon one of the vendors 2 weekends ago, selling Mexican fare, including fresh homemade guacamole. I don't know what her exact ingredients are, but it is SO good. Sooooo goooooddddd....

For sure: avocadoes, onion, garlic, cilantro (a lot!), salt and pepper.

I'm sorry, but how on earth was I a mayo fiend for so long when this DELICIOUS and NUTRITIOUS option was so readily available?!?! Healthy fats, not fake saturated fats. And so much more flavor!

At $6 for a 250mL container... I've spent $12 on guacamole in less than 10 days! Wowza! Actually $18 since I bought a container for my brother. Either I find an easy (I'm *not* a cook. At all.) recipe and figure out where to find some quality avocados, or I put this woman's kids through university!

Either way, a win-win. Super yummy nutritious for me (and it boosts my tomato consumption, tomatoes and guac go together better than PB&J!), boosting the local economy!

    I do the spaghetti squash too. Delicious with ground turkey meatballs and standard tomato sauce! It's a favorite in my house!

    Cauliflower here too. I was never a fan at all. I now steam and mash them up and do a half & half with mashed potato's.

    My girlfriend sometimes uses spaghetti squash as pasta. with some home made Alfredo sauce made with fat free cream or half & half

    Man, isn't that the best when you find foods like that and you can eat them without the guilt? You just reminded me that somewhere I have a recipe for an avocado, mango, black bean, and tomato salad. Weird combo, but surprisingly addictive! Where did I leave that recipe???

    Cauliflower rice. Cauliflower was not at the top of my favourite veggie list. I was looking for an alternative to rice/pasta and tried ricing the cauliflower.

    Now its a staple of my weekly meal plan - who knew.

    Shredded zucchini is another - I often ate zucchini roasted grilled, and in stir-fry. Recently started shredding it in everything - eggs in morning, soups, tomato sauce - zucchini's are going to be keeping my kids from going to college.
