I'm a good cook, everyone tells me so. I have great cook books and I enjoy watching cooking shows. I even have one of those Ronco "Set-n-Forget-It" Roasters that I bought at a garage sale. Never used it. Basically, I have never cooked a whole Roast chicken in my life. Anything larger than 2lbs and visions of "How The Grinch Stole Xmas" come to mind, where at the end...the repentent Grinch gets to carve 'the great Who Beast'. Defrosting, soaking, gizzard sacks in the body cavity... Nope nope not doing it. Which is a shame, because I love Roast Chicken!
So you can imagine my delight when a neighbor sang the praises of Rotisserie Chicken (RC) in the hot deli section of our local super market. They're cooked to perfection, golden holiday brown, warm with juices flowing. Reasonably priced. Baby, where have you been all my life?
What does this have to do w/ SparkPeople and my weight loss journey? Well, RC has become the corner stone of my nutrition plan and my family's weekly menus.
- RC served as main course for a healthy dinner
- RC shredded over a green salad
- RC stuffed inside a pita w/ lettuce, cukes & hummus
- RC stirred into a vegetable soup
- RC stacked on 9Grain w/ avocado, lettuce and tomoatoes
- RC rolled into enchillada sauce for a quick healthy taco-to-go
- the list goes on...
If I count the hours I have in my day, spending 2 hrs on prep and cook of a "Who Beast", is not where I want to invest. I'd much rather spend 50% less time and be sitting down faster having a catch-up dinner w/ my husband. RC is healthy (I get the free-range brand), yummy and fast. It helps me stay on my nutrition plan, get's me the protein I crave w/out the stress, and my family knows there is more than just 'rabbit food in the fridge'.
