Thursday goals + vegan cauliflower & cheese

I’m not sure I met all my goals today – I definitely ate clean and moved my body but I’m not sure I got my 2 litres of water.

It was a busy day today – Every Thursday, I volunteer at the Language Centre at the University where I work and then I have to go to a local secondary school, where I also volunteer as a MFL Assistant.

I also had errands to run and then back home to put supper on before picking up my son from basketball club.... Phew!!

But in the midst of all this I’m not sure I drank enough: Big mug of tea for breakfast, 2 cups of coffee whilst at the secondary school, then 2 or 3 tall glasses of water at home + a cappuccino after supper.


I usually always try to drink 2 litres of water and the teas, green teas and coffees or cappuccinos are extra. Ah well, you can’t succeed all the time.


I ate clean! emoticon

Breakfast: Bran flakes + banana + flaked almonds + sultanas with soya milk

Snack: Cashew nuts + sultanas

Lunch: Leftover brown rice and chickpea salad + oat crackers

Snack: (As my portion of leftover salad was tiny, I was starving by 3pm) 1 bowl of sweet potato + coconut milk soup.

Supper: Vegan cauliflower & cheese

Snack: (post workout) Small handful of cashew nuts.

Here is a picture of the Vegan Cauliflower & Cheese I cooked tonight. I adapted a Mac & Cheese recipe from Oh She Glows and it turned out beautifully:

I have lots of it leftover for the weekend. Actually, I have lots of leftovers for the weekend: leftover Vegan Cauliflower & Cheese, leftover Vegan Burger, leftover Sweet Potato Soup.... I don’t need to cook anything until next week - I just need to empty my fridge!

Here is a picture of the certificate I was given today at the University’s Language Centre as a thank you for my volunteering work there.

It is a lovely gesture, but unfortunately, they got the date wrong on it. I have been doing those sessions since November last year, but the certificate says I started doing those 2 months ago, instead of 6! Ah well, I suppose it doesn’t really matter in the grand scheme of things!

PS: I’ve just discovered tonight that Candy the cat likes cashew nuts – I had to share my post-workout snack with her!!

    All the "oh she glows" recipes are turning out really well for you - it must be a well thought out site! The water thing always gets me mostly because I'm drinking tea and other liquids (smoothies etc.) throughout the day. I've been getting in some extra water by making it a point to drink more water first thing in the morning (plus I read in a medical article that drinking cold water first thing in the morning speeds up your metabolism)..WTG with clean eating & working out! The certificate looks impressive :)..
