OK! so that paprika sauce gave me pause for thought.
Last night I started the dinner planning for my meal with the veggies. DH decided that he wanted some of his own make of soup for his evening meal, given that he'd had rubbish for lunch, and his blood sugar levels were all over the place.
So, for me, I wrote down broccoli and beetroot - the latter because I had opened a packet and so I needed to use it up.
I didn't know what to have as my protein. Usually, if I get to that stage for my dinner, I have eggs.
Last night, though, my intention for dinner for us both was a tuna pasta bake. And fish is something we could/should have a bit more often. So I had did a bit of thinking, then came up with beetroot and mid to eastern European cookery. Beetroot and herring. And I had the Lidl herring in sauce that I can eat and enjoy.
So the beetroot - another of the pre-cooked beetroots from the vacuum pack I opened the other day. It's cooked beetroots, no added anything, vacuum packed, and usually I roast it.
Last night I diced it very roughly Into a pan and added homemade veg stock from the previous evening's baking of the pork steak. Then a wee dose of cream and a couple of teaspoons of paprika, and let it simmer/reduce.
I had the paprika beetroot with 2 fillets of herring (from Lidl, so I didn't have to cook it), parboiled fried potato and sweet potato; broccoli; tomato, onion & garlic; and some soft "hard boiled" eggs.
I have to say, I enjoyed my dinner even more than the night before! I had a lovely savoury after taste, which was *not* fishy-flavoured - a major bonus, as far as I'm concerned.
I will be making this again for myself. And DH said he'd like to try it too.
The one thing I will try to add in is some apple, and I reckon I'd do that as stewed apple with lemon or lime, wedges or more probably juice.
