Coffee Cup Muffin to new Heights - Literally!

Ok, y'all. You have GOT to try this. Please don't tell me it is bad, cuz it is oh so good!!

Remember when I was so happy to rediscover my recipe for flaxmeal muffin? Nothing new for some, and some people call it Minute Muffin. Well it has been my lifesaver.

So anyways, I still have to snack in the afternoon. I thought today I could get past it, since I ate breakfast at 9 (instead of somewhere between 4 & 7) so lunch was at 2ish, and maybe I should have ate more lunch, cuz I wanted something again this afternoon.

So... I made my muffin again, but this time, I used: 1.5 T carob powder (hmm I dont think it was 2) 1 tsp vanilla, 1 T of the morning coffee, 1+T Ghee, .5 T pecan meal, nixed the cinnamon but everything else the same.

O. M. G. it was so good!! It was just like a moist piece of chocolate cake!! Maybe not as sweet of course, but it was the same type texture! And it went OVER the top of my cup. The same cup I always make my morning muffin, which goes past the top but straight up, so then it goes back down usually, so straight up, straight down. Not this bad boy. It went up and over. It looked like an actual cute little muffin top :)

I can add blueberries, it becomes a muffin.
I can put cream cheese on it, or Fifty 50 jam on it and it becomes my toast.
I could just cut it half and it becomes my bread or a bun.
Just endless possibilities!! Okay maybe not endless, but all kinds anyways.

Exactly what is IT, you might ask?

I call it a Coffee Cup Muffin. And it is my new best friend.

1/4 cup flaxmeal
1 egg
1 tsp cinnamon
1 tsp butter
1/2 tsp baking soda
1 packet splenda

Microwave for 1 minute. That's it!!

You can change the shape by using a different container. I do spray or oil my cup, and sometimes I mix it in the cup and sometimes I don't and then pour it in. I haven't tried other spices but I am sure you could make it just about anything you wanted.

It is not my original, not sure where I got it from but I had forgotten all about it until just the other day. So glad my memory is improving! Now if only I could remember if I just found a rope or if I lost my horse ...

    OH I WISH I LIKED COFFEE !! On Dr Oz he had one, didn't include coffee,,,I wasn't paying that much attention til the MIDDLE OF IT ! GRRR than I WANTED IT ! SIGH !
