What a wonderful Vacation!!!

It's a bit frustrating before you go on vacation. You don't want to announce on Facebook or SP that you will be gone for an extended period of time because you never know who will read it. But now we are back and I can revel in giving the details! Yeah!
We went to Mexico for 10 days. My first amazement was at how well I fit into the airplane seats! Last time we flew I was afraid they were going to make me buy two seats, but this time I had room to spare. My next amazement was when I was still ready to go when both my husband and my son were worn out! Then there was my husband telling me how well I was doing and that last time we were there I would have been trailing behind and out of breath. We even rode horses up to a waterfall. What an experience that was! I haven't been on a horse in years, and the poor critters knees didn't buckle when I got on either.
I did good on eating too. So much fresh food available. I found the most wonderful concoction of fresh coconut, honey, and spices that were mashed together like carmel popcorn. Deliciouso! We ate lots of fish and I didn't always clean my plate. I felt better and my sugar wasn't too bad. Also found a new favorite drink to replace Margaritas, it's called a Paloma. Take diet fresca or similar drink, put salt and tequila in and you are done. Tastes like a less sweet margarita, which I like because sometimes those margaritas just get too sweet.
My husband caught a Rooster Fish and we grilled that bad boy with butter, fresh Pablono peppers, onion, tomatos, lime juice and spices. Pablono's lose their heat when you cook them and turn sweet. I never knew that.
We met lots of new people and I got to improve my Spanish quite a bit. All in all it was just a wonderful vacation and I feel like my batteries are recharged. The best part was when I got back I found out that I was a full time employee! I'm a real girl now. LOL
I hope you all can have such a wonderful time at some point in your life. I will cherish this for a lifetime.
