Well I'm going to say off the bat that the vegan challenge hasn't turned out to be as easy as I thought and it hasn't produced the results I expected. Despite eliminating dairy and doubling my workouts, the scale has not moved for me which is disappointing. The cravings for dairy and sugar in general have not been good. So far I only indulged in some non-vegan chocolate (it was Easter after all!) and have been good at sticking to it. I have been having some wonderful vegan meals during the challenge however and here are a few of them.
This was a great salad I got at a favorite market/store called Shubies. It has chickpeas, edamame, peppers, and tomatoes with a great sesame dressing.
This is one of my specialty breakfasts, which I made myself I might add! It's a tofu scramble with potatoes, baby spinach, tomatoes, mushrooms and Gimme Lean veggie "sausage". Yum!
We had this for dinner last night, made by my sweetie VEGGIEINSALEM. It's Gardein "beef" tips, wild rice, peppers and spinach over salad with soy sesame dressing.
So we have definitely enjoyed some good vegan food! However, due to some complications and also working with my partner, I will most likely be adjusting the challenge after Friday. I did notice that if I am not watching my protein, I start to not feel well. So I think I am going to limit meals with dairy to maybe once a day (at most) for the duration of the challenge and try to be vegan the rest of the time if I can.
How are you doing with your challenges? What struggles/successes have you had? Remember that this is part of a journey and all our experiences are chances to learn. Don't feel like there is a pass/fail grade you are looking to get at the end of this. It's not about "winning", it's about trying something new and learning what works for you.
