My lovely step daughter made a wonderful non-traditional Easter dinner that was really tasty. We enjoyed fresh salami wrapped around cheese with kalamata olives and crackers as an appetizer. A romaine lettuce, red onion rings, smoked almonds, pears and goat cheese salad with balsamic vinegar and olive oil dressing followed. I made the salad, but here you can see BJ tossing the salad and adding the dressing.
But the best part of Easter dinner was a new recipe for a meatless lasagna that had a variety of meaty mushrooms
Just delicious! Oh, and the James Tobin wine was really good too...
