A long weekend is a great time to get in some batch cooking, so for people who have Monday off, why not try cooking a new recipe? Here's what I'll be eating this week.
Chickpea Picatta with Caulipots
(For the caulipots, cut and boil potatoes and cauliflower. Drain and mash with a fork. Add vegetable stock if needed.)

I love big batch cooking with my crockpot. Look forward to trying some of these...and some on your recipe page-- especially that roasted Vegetable pizza- looks awesome!
