Wheat Free

Staying wheat free is soooo hard. Just realized that the grilled MAC salads must have breading on it. So sad. Now have to start making my own chicken salads to go.

Anyone have a suggestion?

    I love salads - here's one of my favourites - have it a few times a week - it's also fairly large cause I eat a lot of veggies, but here goes:

Two handfuls of baby spinach
Two handfuls of mixed greens
A few slices of red onion
Two green peppers chopped
One or two red or yellow peppers chopped
Crumbled feta cheese
Crumbled pre-cooked bacon
One large chicken breast - grilled and pulled

Make my own dressings - olive oil and balsamic goes well with this - could add some garlic and lemon or lime juice as well.
