Well definitely I had the local lurgy, and I'm still getting over it. At least I can go out and about again, and make dates to go for a walk, etc.
Today I just want to tell folk about our dinner this evening. In years gone by, and even just weeks ago, I would have said that our dinner tonight was roast lamb with potato and veg.
I have turned a corner, at last, and now I will say that tonight's dinner was a variety of vegetables with roasted potatoes, roast lamb and some lovely gravy.
When I went through to the kitchen to make the dinner, I was actually wondering what we could have in the way of veg!
Oh me of little faith!
I got the potatoes peeled, and also some carrots which I got as sell-by, and are now going off. So that was one pan - I do try to put the roots in to cook together, these days. No more having to microwave the carrots separately, as DS older is no longer living here. And his flexibility is better now, so he copes with the carrots however I've cooked them, thank goodness.
There's only DH and me for dinner tonight so I was able to count the bits of potato into the pan, and also the carrot.
These were put into the base of my small steamer (£9.99 from Asda for a base and 2 steamers, though I think they may be a couple of pounds dearer now).
I had a quarter cauliflower needing used - washed, cut, and into one steamer. Then a lovely big fresh courgette, cleaned and cut into another steamer.
I fancied some Beetroot. So, I opened one of those vacuum packs of cooked beetroot that has absolutely zero added, cut some in half and put 5 halves in the oven with several cloves of garlic, a sprinkle of olive oil and a couple of teaspoons of orange marmalade (just for a change).
I peeled and divided some shallots, and braised them in a wee spoonful of dripping from the lamb.
Then I remembered about some packets of radish - so 1 packet prepared and put into the steamer with the cauliflower.
So tonight's dinner -
Roast potatoes, roasted beetroot & garlic, steamed cauliflower & radish, steamed courgette, boiled carrot, braised shallots with cherry tomatoes, meat and gravy.
Btw - I didn't have meat with my meal. I took several tasters as I was getting everything else ready, and reckoned that, with another wee slice/taster, that was my helping for today!
Tasty? Oh yes!
Meat as the main part of the meal? No, and even DH wasn't complaining!
