My favorite sparkpeople recipe is a makeover of a delicious banana bread. I exchanged corn flour (harina) for the wheat flour.

Tips
By substituting corn flour for the original white flour makes this bread gluten free. Iput walnuts on top after it was baked and, although not overly sweet, my bread tasted very satisfying.
Ingredients
3 bananas
2 cups corn flour (harina, farinha de milho)
1 tsp baking powder
2 tbsp oil
Directions
Preheat the oven to 350*F.
Mist a loaf pan with oil.
In a large bowl, mash the 3 bananas with a fork until mostly smooth.
Add oil, and mix throughly.
Add baking powder and dash of salt to the mixture, and stir.
Add flour and stir until combined.
Pour batter into the loaf pan.
Bake for 40 minutes, or until top is lightly golden and toothpick inserted in center comes out clean.
Enjoy this light fluffy banana bread right out of the oven, or after a few days.
I like to spread applesauce and sprinkle cinnamon on top.

Apple Crisp
4 cups cooking apples, sliced
1/3 cup flour
1 cup oatmeal, uncooked
1/2 cup packed brown sugar
1 tsp cinnamon
1/3 cup melted butter
Directions
Peel apples; slice into 13x9 buttered pan. Combine dry ingredients into bowl. Mix melted butter with dry ingredients until crumbly. Sprinkle crumb mixture over apples. Bake at 350 degrees for about 1/2 hour or until apples are tender.
1/2 cup = 3 pts
