Flaxmeal to the Rescue!!

Please don't tell me it's bad, just let me live here in my bubble. Okay NO, if it is bad, tell me I guess.

But I sure hope not because this little gem is what I have been using to help get me through those times I thought I might want some little somethin'. Helps me to not feel deprived might be a good way to describe it.

I can add blueberries, it becomes a muffin.
I can put cream cheese on it, or Fifty 50 jam on it and it becomes my toast.
I could just cut it half and it becomes my bread or a bun.
Just endless possibilities!! Okay maybe not endless, but all kinds anyways.

Exactly what is IT, you might ask?

I call it a Coffee Cup Muffin. And it is my new best friend.

1/4 cup flaxmeal
1 egg
1 tsp cinnamon
1 tsp butter
1/2 tsp baking soda
1 packet splenda

Microwave for 1 minute. That's it!!

You can change the shape by using a different container. I do spray or oil my cup, and sometimes I mix it in the cup and sometimes I don't and then pour it in. I haven't tried other spices but I am sure you could make it just about anything you wanted.

It is not my original, not sure where I got it from but I had forgotten all about it until just the other day. So glad my memory is improving! Now if only I could remember if I just found a rope or if I lost my horse ... emoticon

    I've been wanting to try it myself but haven't done it yet. I've heard nothing but good things about flax. I should put that on my shopping list this week

    I don't know where I would be with flaxseed coffee cup muffins!!! I literally have one for breakfast most days a week! I cut them into 4 slices and make little bacon sandwiches lol Or I top them with cheese and put them under the grill for a kind of cheese on toast. Yum yum yum. I've not even explored the idea of getting some blueberries and making little blueberry muffins out of them. Think I'm gonna try that this weekend. Thanks for that.

    splenda is a nasty chemical. BUT your MIM (as they are called) are AMAZING!!!!
    I would exchange honey or stevia for the splenda. But that's just me =)

    I'm glad you found a way to fill the void you were feeling!!

    I just bought some chia seeds to use for making puddings or things like that. I haven't used em yet though...
