Awesome Health News and a GREAT Salad!

So...I'm 26 (I'll be 27 in May) and at age 20 my doctor told me I had "dangerously high cholesterol" basically my total cholesterol was somewhere around 300 and Triglycerides were in the 400s and even my good cholesterol was too high. Because I was only 20 years old and very physically active (and 30+ lbs lighter than I am today) he didn't put me on medication and told me to try and lose weight and keep exercising to see if I can reduce it on my own. In 3 months I lost 20lbs and had cut the numbers in half, but then I went back to my old habits and gained it back plus more. Out of shame I stopped getting it checked and lived in denial.
This year my job offered each employee $100 to send a blood sample to a lab to get a health screening. I decided I needed to know and I REALLY needed the money! I got my results yesterday and ALMOST EVERYTHING IS IN THE NORMAL RANGE!! Total cholesterol is 182, HDL is 42, LDL is 96, and ratio is 4.3!!! Only thing is Tri's are a little high at 224 but SO MUCH BETTER!
I feel like I've been vindicated in my decision to go vegan and it feels SO DAMN GOOD!!!
In other news, I have discovered a new favorite salad type thing. I should preface this by saying that on the weekends I eat vegetarian. I allow myself a little cheese, don't really eat eggs or milk.
I say this because the "salad" includes a little wedge of Brie. All I do is take a fork and stick a little piece of brie toward the top, stab some arugula onto the fork, then stab a strawberry and shove the whole amazing forkful in my big mouth. The flavor combination is incredible. The peppery arugula, sweet strawberry and creamy brie just go together like soulmates.
Wow, this was some random jumbled crap put together. Oh well! Happy St Patrick's Day everyone!
