I made this today and it was SO good. I did wind up using less olive oil (I ran out) and a bit more lemon juice, but it was so delicious. I also used whole grain pasta rather than the usual stuff.
Perhaps adding some cilantro would be a good idea. Subbing another type of nut for pine nuts might be a good idea, cost-wise. Almonds, maybe? Walnuts? (Not that nuts in general are cheap, but. . .) A pinch of cayenne might be a nice addition, too.
. . .not that it needs any changes. It was so deliciously creamy and good, plus there weren't many ingredients and it was incredibly easy to make. I'm sure I don't really want to know the calorie count for this, but I had a small bowl and left it at that. Oh, and I didn't even miss the cheese I'd normally add to pesto.
