Mexican entrees at the dinner party

I'm ashamed to admit it, but I didn't get pictures this time around! Between 18-month-old Luci chasing my cat and 5 hungry adults, didn't have time to get the pics!

I was worried that I made too much food, but it turned out to be just enough to get everyone full! I started with tostadas. I made my own refried beans, pico-style raw salsa, salsa verde, and mango salsa, and then made guacamole and put out greek yogurt in place of sour cream. Sooooo healthy and delicious!

Then I made two types of enchiladas. I made sweet potato enchiladas and spinach and mushroom enchiladas. They were both great, and the five of us went through all 8 tostadas, 12 enchiladas, all the guacamole and refried beans, and nearly all of the salsas (as in, barely one serving left of each!)

Oh man was it good!!!

Then I made a sopapilla cheesecake for dessert. I sent the leftovers home with my parents, and with Desi and Zoe. It was delicious!

All in all, a great night! The five of us went through a bottle of red wine and a bottle of white wine, and I've got about 1/2 cup raw tomato salsa, 1/4 cup salsa verde, and one enchilada left...the rest all got devoured, so I won't be plagued with temptation!!

There is no better way to spend a Saturday night!!
