I just had a brain wave writing on another’s post. I had told DH we do not need Golden syrup around the house for the English Pancakes tonight. He had that all the time at his house we had sugar and lemons.
DH loves Dark chocolate, I buy Ghirardelli 60% cacao. I use that on fruit for him he is a chocoholic and he likes the chocolate much more than the fruits.
Tonight I will put 16 of those Chocolate chips on a hot large pancake and I will swirl it around with Vanilla yogurt, YUM I bet he will like that. I might even add fruit and nuts-gets better every time I write it. Bananas and walnut pieces-all heart healthy additions. English pancakes involve no sugar at all and I have even made them with water instead of milk when DH was on a lactose free diet a long time ago.
I was responding to my friends who read yesterday Blog about Pancake Day, Mardi Gras today.
I was a bit reluctant to even make them, but I really wanted to. The Golden Syrup we can buy locally. It is an import and way too expensive and EXPANSIVE to the waist line and blood sugar.
It’s Brand name is “Tate and Lyle Golden syrup” and it is made about 1 mile from DH house that he had bought prior to our marriage. We lived there prior to coming to the US. So you must appreciate the connection here. That is DH home town, Thornaby-on-Tees, Yorkshire, England. That connection is very strong for him. However this little can is 100% liquid Golden Sugar and it makes fabulous treacle toffee. I just know that will be the next way to use it up however that will not be happening here, OH, NO!. There are no boys around to help him eat it.
I KNOW,- POOR DH!
The chocolate will be my compromise, these chips are the greatest. 5 calories in each one. I seem to have endless ideas with those 5 little low calorie gems.
DH can only eat cooked apples and pears, the skin makes his lips and tongue swell so we avoid the skin. I still have the Benadryl and EpiPen handy but we feel safe now after many years of no fruit for him.
I use the microwave constantly and I do make healthy food from scratch every day.
Once we discovered 60% Cacao Ghirardelli I was hooked on it.
I peel fresh pears and Microwave the halves with 8 chips in each core cavity. They look nicer with the chocolate poured over the top but DH likes to keep it off the plate so I sacrifice looks of presentation for his pleasure, he is worth it.
A great morning snack for me is a Graham cracker, just one square and I put it in my oven for 10 seconds with ONE chip on top. It melts and I spread it with the back of the warm spoon from my coffee, that makes it spread even better and, I can LICK the spoon.

I do Bananas the same way, DH eats them for dessert often, he needs the potassium that his medications deplete. That is a tasty way for him to get some extra Potassium, and he loves it that way.
I am writing this early because I am in the mood to do some housework and two walks so I am planning my time a bit better today.
I am sure these will be a HIT!.
