Dear Hubby is finally catching on. I'm NOT giving up on healthy eating, for both of us. He fixes his own breakfast, usually 2 fried eggs, 2 slices of bacon, 2 slices of toast with margarine and a tall glass of orange juice. He fixes his own lunch, usually an apple and some fresh veggies. But for supper, we eat what I fix! Last night it was tilapia, white and wild rice, and acorn squash. I have a variety of meals in my head, so I can make sure we are getting a good balance. I printed off a blank calendar and each evening I print what we had for dinner. That way we don't duplicate something that's not one of his favorites. (If it were up to him we would have pork chops and potatoes and corn every night!) I usually try 1 or 2 new recipes each week and the ones he likes, I keep. He's now buying whole wheat bread and apples regularly. He told me tonight that he fastened his belt into the smallest hole today. YEAH!!!! We are expecting a new grandbaby this fall and I want us both to stay healthy so we can enjoy it. Yes, he's giving in and that just encourages me all the more!
