Valentine's Day = Food? Food=Love???

Why is it that I associate every 'holiday' or 'special event' with food?
Food = Love.
Somewhere I got that message.
So tonight I am making a nice dinner for my husband and myself to have at home.
I will be making "Spicy Sauteed Shrimp with Garlic" on Jasmine Rice.
I make it with mixed stir-fry vegetables. I have shared the recipe here before. It's very good and very low in calories and fat.

I also mixed up a quick salad recipe that I got years ago from my mother-in-law. She always called it the '4-H Salad' as she would make it for 4-H events.

It's very easy to make and can be made healthier by what you choose to put into it.

Here's the recipe:

Famous 4-H Salad
8 ounces of Cottage Cheese (pick the % of fat: fat free, 1%, 2% or 4% milk fat)
8 ounces of Cool Whip or Whipped Topping, thawed (again you pick fat free, low fat or regular)
1 small box of orange Jello or gelatin (or any other flavor - can use sugar-free version)
1 can of mandarin oranges, drained (or any other canned fruit, drained)
I am using drained, canned, pineapple tidbits.
Mix all of these ingredients together and chill for several hours before serving.

I also made a simple Chocolate Mousse for dessert. No recipe ~ just the mix made with low fat milk.

Food can still mean Love - I just need to make healthier choices and watch my portion size.

    Sounds like you had a super yummy "V" day meal and I do the same thing holiday = food.

    Old traditions die hard.

    We were a 4-H family too (of course with the dairy you probably already guessed that one). ;)

    I feel the same way Maria. Food = Love. Sounded like a wonderful meal. I have some shrimp in the freezer. Maybe I'll do a shrimp stir fry with it. Thanks for the 4 H recipe. Hope all is well with you. I have been a missing. Need to catch up with all my friends here.

    Maria, since you grew up in the same general time and area that I did - I'm guessing you also had a grandmother that fed you at every opportunity. How could we fail to equate food with love? emoticon Happy Valentime's Day!

    So true! We actually did not celebrate with food today. Everyone made Valentines cards for each other instead and we had a wild rice chicken stew for dinner.

    Those all sound yummy! I hear you about food=love! For Valentine's Day, I have gotten truffles, peanut butter cups and the biggest of red velvet cake ever!
