Cooking for one...

So my friend's mom is in town for a month and she makes some very tasty but unhealthy southern food. Even when she isnt here Becca doesnt do healthy eating, she is more of a fast food/frozen dinner kind of girl. Any suggestions for healthy cooking for one person??

    have all the salad ingredients in your frig you can think of.. have a salad everyday for lunch or get some good whole grain bread and use those ingredients for yummy sandwiches...

    I would cook for two and split the meals so you have lunch or dinner again. I would also consider checking online for some good ideas. Soup and salad is also a good option.

    If you pick up a WW magazine, they have sections with recipes for just one person. Another option is to make a normal recipe, divide it up and pull it out as needed. There's also always the soup/salad/sandwich route. Personally I like the following: one serving cooked rice/couscous (anywhere from 1/4 cup to a cup depending on my hunger level), salsa, lettuce, veggies and 1/2 cup beans of your choice. You can add chicken, tuna, whatever. It's quick, easy and it's kind of like getting a burrito bowl from Chipotle.
