So, today marks one month since I joinedSparkPeople! Technically, I guess I joined in September, but I have only been using the site since the first of the year. I can honestly say that using the Food and Fitness Tracking Application on my phone really keeps me on track. Logging everything is almost second nature at this point.
Last night, I made spaghetti squash for the first time for my brother and myself. It was absolutely delicious! Now, I am a pasta loving, Italian gal. Italian dishes and restaurants are my absolute downfall. This dish was surprisingly filling and so low in calories.
Since I had never cooked Spaghetti Squash, I searched online for some tips. I followed the directions from this site:

I made really easy Turkey Meatballs and served some (previously prepared) homemade tomato sauce on the side. SO simple.
I am now on a mission to find other ways to use this superfood. My one brother does not enjoy most cheeses, so I was somewhat limited last night. Luckily, I love cheese

and I have already lined up a few recipes to try over the next few weeks.
Well, I am off to have a relaxing evening.
