Today is day #4 that I have had salad for lunch...and liked it. I have never...and I do mean NEVER eaten only salad for a meal. I do admit that one was a taco salad and I do put salad topper & Tortilla Strips in my salad, but I am eating Salad. Even more surprising, I am eating vegetables. I have always said I didn't like any vegetables other than corn, potatoes, and a couple of types of beans. I have come to discover that Lettuce, Tomatoes, Cucumbers, Black Beans, Sweet Potatoes, Mushrooms, Squash,Bell Peppers and several more are actually really good.
I have always planned our meals for the week, but now I'm making better choices. I'm always looking for ways to add vegetables to our meals. Bell Peppers, Mushrooms, and onions chopped up and added to spaghetti sauce. Baked Sweet Potatoes can actually go with more than steaks...Who knew?? My Crock Pot is my new best friend. Who knew you could throw alot of vegetables and chicken in the Crock Pot and have dinner ready when we get home in the evenings.
I'm loving my new attitude!!
