I Heart Spaghetti Squash

Yup, you read correctly. I am devoting an entire (albeit short) blog entry to my newly discovered favorite food - spaghetti squash.
My Crossfit group is doing a 1-month Paleo challenge and everyone has raved about spaghetti squash. After preparing it properly for the first time this weekend, I now know why.
Have you tried cauliflower "mashed potatoes?" Well, spaghetti squash with marinara sauce is a far better substitute than cauliflower is for mashed potatoes. Hands down.
And, it has 21 calories per half cup, as opposed to 100+ calories per half cup of pasta. Score!
If you've stumbled upon my blog and want to know how to make this delicious side dish for yourself, here's how:
Cut squash lengthwise.
Place cut side down in a baking pan with 1" water.
Bake at 350 for 40 minutes.
(I also am told that you can microwave them for 15 minutes.)
Scrape/scoop out the squash. It will look like spaghetti strands this way.
Add marinara sauce or other toppings that you would use with pasta.
