I've been slacking... day 4-7

Now that things have calmed down from a busy few days and we are relaxing watching football (GOO LIONS!! Sorry just had to get that one out) I have time to post and give an update. I have been pretty busy the last few days and my husband has worked late all week so I slacked a little bit, but I did not cheat. I did not really make dinner and just ate up leftovers to clean the fridge out. But things calmed down and today I did make dinner and all were new recipes that were a total hit. So here's the rundown...
Day 4... leftovers

Day 7... Broiled Barbecue Chicken, Oven Fries and Black Bean and Corn Salad
I do feel accomplished because I really wanted pizza for dinner a couple of times this week, especially tonight to have while watching football. I have also notice that food isn't sitting in our fridge to rot and get wasted, we are actually eating it, so we are saving money in the long term. I am very encouraged at seeing these things already and can't wait to see how much of a difference it will make in the long run. :o) Tomorrow we have church in the morning and then a lot of yard work that just never seems to go away (we're getting used to having grass and leaves again) so we will be a bit busy and active but staying home and sticking with my plan. :o)

    When you're watching your food intake it's much easier to cook at home. I am not a big fan of leftovers but I will eat it if I have to. I hope you had a great weekend!

    There is nothing wrong with eating left-overs. Some recipes make 8 or 12 servings and unless you have a big family, that automatically means left-overs.
    We rarely eat at home, but tonight I made a sparkpeople recipe. It was really good. Honey Balsamic Chicken.
