Picture Updates from Thanksgiving thru Christmas!

Wow- what a month it's been!

Sorry I have not been updating around here very much lately. To be honest, I have been too scattered and busy-- but in a good way, I think -- to feel very inspired or excited to take the time to share much here in the past month.

However, after today's experience with a Neggy at work, I'm ready to just share a little JOY and updates to those here (on Spark) who may be interested and joyful with me! [I inquired about a co-worker's Christmas, asking, "Did you have a nice Christmas?" and she replied, "No, not at all. It was terrible... just sat around... looked at the walls... fell off a ladder and hurt my knee... felt like crap..." and I just had no clue how to respond besides, "Oh... uhh, sorry to hear that!"]

So, because I'm short on time, and because most people enjoy visuals, I'll share my last month's updates in PHOTOS with minimal story-telling. :)

Thanksgiving: Mama, Grandma, and me

Thanksgiving: We never have enough food (clearly). This is AFTER everyone ate.


We got our first "real tree" this year in our new house! Up to this year, Paul and I only had little 2-foot fakeys. I grew up with live-trees, so we got a Frasier Fir and I was tasked with lighting it! 1,100 lights wound in and out, up and down!

My cats have really enjoyed the tree. Nina thinks she looks stunning on the red velvet tree-skirt, and Oliver has just been a royal pain, playing in the branches and batting ornaments all around the house.

It really turned out quite stunning.


I spent some fun craft time with my "little sister" this month, too. We decorated clear glass bulb ornaments with paints, tinsel, and beads.

We also made a pizza together FROM SCRATCH, which she had never done before! She thought it was the best pizza EVER! Then we went to a local high-school production of "A Christmas Carol."


I experimented with making a few healthy, vegan cookies to bring to a holiday cookie exchange party. They turned out pretty well, although I'd try a different ginger-cookie recipe next time, as these definitely tasted like "healthy cookies" (in not a good way!). ;)


My best friend Katie and I had our annual baking marathon day. We still do it at my mom's house, so I go there on Friday night to get ingredients all set up and ready, and do any grocery shopping with my mom. We also got a head start on some cookie-dough, before tackling a 13 hour day in the kitchen on Saturday!

We decked out in Christmas earrings, sweaters, and goofy clip-in antlers for fun!




My mom always makes up huge trays with all the goodies from the day and delivers them to family and friends in town. We also share them all at work, too! Unfortunately, I didn't get a single "Thank You" from any of my co-workers for the tray I brought in, but they sure devoured every morsel...


I finally got all my Christmas shopping and wrapping done last week just in time! We are so very blessed to be able to give and share with family and friends.


My wonderful hubby got me just what I asked for: an Amethyst Om Mala, from tinydevotions.com. It is stunning, and meant to help cultivate peace, tranquility, and spirituality. With how crazy my life is, and how frustrated and angry I can get with myself, this is the PERFECT reminder to stay calm, breathe, and appreciate life's most beautiful blessings. I am feeling it's healing effect on my attitude already, even if it's just as a quiet calm reminder around my neck!


I was also spoiled this Christmas with a new set of square white dishes (Yay!!), a few new Wustoph knives (amazing quality), two new cute pottery mugs for my tea (I drink a ton of tea), and several other goodies that I'm so thankful for!

Today, I broke in my first new plate with my lunch. I've been experimenting lately with more vegetarian/vegan eating, and cutting back on my meat-consumption. It feels really good, both physically and ethically, although I worry about how my family will/would take it if/when I decide to go almost entirely vegetarian. Almost every family dinner in ALL parts of my family is centered around a huge meat-entree, and lots of carby-cheesy-starchy side dishes and over-the-top mayo-y or whipped-cream "salads." Yikes.

Anyway, for lunch today I had tofu "Eggless egg-salad" (very good!) on whole-grain bread with sprouts, steamed edamame, and half a grapefruit. I also had a cup of green tea and water.


That's it for my pictorial updates, friends! I am off to do another Health History consultation, followed by an outdoor run, making dinner, lining up musicians for church, and then another consultation tonight!     I love the crafts and pizza you made with your little sister. I think it is wonderful you have made this commitment. Good job on your beautiful tree. I bet is smelled nice. My mom cooks very much like your family and has never changed, so I know what you are talking about. I love the food you posted, yummy and I went right to your FB page:)

    I am trying to eat less meat, and hopefully dairy also. I am also curious about what meals with family (and friends?) will be like, time will tell! I am having a hard time figuring out how to get away from dairy, especially since I love cheese!

    Your tree looked beautiful! I'm glad you had a good holiday. I decided to jump in and follow a vegan diet in the new year after researching factory farming and the health benefits of eating vegan. I also read Alicia Silverstone's "The Kind Diet." I've been eating vegan for a week and I love it!

    Wow what a great pictorial description of your holidays. You look a lot like your Mom and Grandma. If you brought me cookies like that at work you'd have gotten a hand written thank you card those are fabulous looking trays, I'm sorry no one appreciated your effort.     Love all your pics! Your tree is gorgeous. I know what you mean about the cats being interested in it. We have 2 cats and the one practically lives under it:) The cookies that you and your friend made look SO delicious. Sounds like you have some rude coworkers,then again,I think my coworkers might react the same way(eat all the cookies and and just act like it was something they deserved:( Idk. Anyway,good luck on being a vegetarian. I could do without red meat but I don't think I could give up chicken or fish. Happy 2012!!!!!!!!

    wow your christmas cookies looked very professional i would definately of thanked you if you brought them to me.maybe not if you brought the whole tray but a couple definately.you have there one that looked abit like a ginger biscuit.can i have the reciepe that looked great.your pizza looked lovely as well,lool.you have just made me hungry.maybe pizza will be on the menu today.thanks for sharing whitney and loved the jumper also the presant from your husband looks beautiful. emoticon for sharing

    Yea for you on the more vegetarian/vegan eating. I stopped eating meat 5 months ago. It was more difficult at the beginning - now I honestly don't even think about it. I need to try more tofu recipes.... I think vegan would be much harder because of cheese. I love cheese. I do try to use almond milk and vegan "butter"....... and use vegan products anywhere I can.... so we will see. Good luck - keep sharing those recipes!

Great blog...definitely want to try the eggless salad :) I totally understand your concern of what your family would say...this has been the first holiday I have spent with my family as a vegetarian and it was really difficult for them to figure out what they could make at the beginning but once they started brainstorming they realized they had a lot more vegetarian dishes in their cooking repertoire than they thought so then it worked out! I have been a vegetarian for more than 2 years on and off (and permanently since new years last year) and it really feels great :D

    COokie extravangaza. I did that too. Baked ALL day on Friday before Christmas. Had so much stuff. I brought in stuff to work- surprised not all got eaten so stuck taking back home with me. Served Christmas but still had left overs. Ended up bringing to my club meeting (running club) where I left them. MOST got eaten. We still have some left, but trying to be good.

    Great pics! All your cooking/baking and decorating look great! Very festive! Sounds like people at work are really negative. Well, you are so positive. Better not let them get you down.

    Looks like you had a great holiday season except the ingratitude of your coworkers. Oh well, their loss. Your husband is a real keeper and your family is a much better version than mine. We had a great Xmas too with great friends and lots of love from kids and grands. Loving life in Mexico!!

    Thanks for sharing your positive and fun update! Loved all the pics and was so impressed with all the baking you did! I used to bake like that B.C. (before child) and now I am happy to do just ONE item. You are so blessed to have your mom and best friend to enjoy that tradition with.

    For the past few years, when I meet up with someone who is a Grinch, a grump or just plain nasty, I respond with some kind of blessing. Usually it's "May you have fair sky's and a following wind. May all your journey's end in safety and harmony, and may the sounds of the oceans lend peace to your soul".

Almost always the person will stop grumbling and look at me with astonishment. Afterwards, some get a guilty little grin or duck their head as a sign they realized they were publically bringing attention to their ill feelings.

Only once did I have a totally surprising response - a woman who must have been having a REALLY Bad day told to "Go F**k off!".

I stuttered, then said, "May God Bless you and give you peace". She was still stuttering and fuming as I walked into the store.

You are always an inspiration. As one of the Vice-Presidents of the FitWhit fan Club, I hope you enjoyed a terrific Christmas, have a safe and Happy New Year and let out all the stops in 2012.

    My cousin is the only vegetarian/vegan in the family so when we get together for our Holiday meal she will bring 1 or 2 of her own vegetarian casseroles that way people can eat her kind of food if they want to and she doesn't go hungry :)
