Instead of going to sleep early, i just read a cool article today about potatoes - I had no idea all of these health benefits of potatos! And so funny, as Chef Meg just shared her Potato Soup recipe a few days ago. Hmmm - what a neat coincidence!!

To be sure - we still need to watch the butters, creams, cheeses, oils that we use on a potato, but nice to know the potatos are healthier than just being a "carrier" for the high fat yummies like butter and sour cream (and hey, okay to work it in as a treat in your dietary plan but try low-far yogurt etc instead of sour cream.).
But no wonder potatoes are so good in the "chicken soup" and other comfort foods for the winter ills!! Yum !!!
