Hi everyone! Thought I would get an early start on today's salad! Last nights salad was delicious - I did cut the recipe in half and only used 1 T of olive oil to cut calories. oday! So no leftovers - have to come up with something different for lunch today!
Tonight we are having salmon and as promised, we will be having a simple Feta Cheese Salad with it. Enjoy!
FETA CHEESE SALAD (serves four)
1 3/4 fresh green salad leaves
handfuls of fresh cilanto leaves
4 scallions, finely diced
4 tomatoes, sliced
12 black olives,pitted and sliced
5 oz feta cheese (going with a light version)
4 T extra virgin olive oil
1 T lime juice
2 T chopped fresh cilantro
salt and pepper
I buy pre-washed lettuce, but still like to give it a quick rinse. Once drained, you can either mix all ingredients in a large salad bowl or layer on individual plates
To make the dressing, place all ingredients into a covered jar or bottle (Good Seasons style) and shake until well mixed. Drizzle over salad greens. Serve immediately.
I will definitely be making the 4 servings on this one, but putting aside 1/4 of it pre-dressing, for tomorrow's lunch. I love the lower fat version of feta cheese, and there are many "flavored' varieties out there to enjoy!
Tomorrow's entry will be a meat salad - chicken breasts stuffed/rolled with blue cheese and fresh herbs. A little blue cheese goes a long way;again you can use the lighter version but still get a punch of flavor with a small amount.
