Quinoa with Pea Pods and Peppers: We didn't forget "the good stuff." We wrote an entire chapter on salads and another one on vegetables with recipes like this one, which is crunchy, fresh, and packed with protein. Finished with tangy lemon juice and fresh parsley, it's bursting with flavor as well as nutrients for only 228 calories, plus 4.5 g fiber and 8 g protein.
