3 eggs
1 c. oil
1/4 tsp salt
1 c. chopped nuts
1-1/2 c. sugar
1 tsp grated lemon peel
1/4 c. lemon juice
1-3/4 c. zucchini (shredded)
2 tsp b. soda
1/4 tsp b. powder
2 c. flour
Mix eggs, sugar, oil, lemon juice and peel. Beat well. Add zucchini and dry ingredients, add nuts. Bake 9x13 pan at 350 for 45-50 minutes. Cool. Frost with cream cheese frosting (I added a little lemon juice to this too and I think the bars could really use a little more lemon juice also). Can bake this in a cookie sheet for thinner bars.
