I have a lot of squash in my refrigerator right now--I went to a harvest auction last week. So today I went grocery shopping, got what I needed and started in on cooking up the squash.
I made roasted chicken with butternut squash and potatoes. Yum! Then I cooked up a big pot of butternut squash soup, portioned it out and put it in the freezer. Those bags will be very nice later this winter when I don't feel like cooking.
Yay for cooking.
