Odds and Ends....Oatmeal update, Retiring, Eye Glasses

I just want to tell all who've read my last blog about steel cut oats that I have continued experimenting with them and have made a few discoveries. I started this because I have been having trouble getting back off sugar. I had gotten started with some occasion that had sweets and just could not kick the habit ....I had gained about 23 pounds back that I had lost last year...and when I ate I immediately wanted to go to sleep. When I decide to get off the sugar I have to really have no sugar....and cut down on the carbs and increase my protein. I have been using 100% whole wheat bread, high fiber pastas, and brown and wild rice for years, so that was not a problem. One of my Spark Friends who read my last blog said she did not really like oatmeal...and to be honest, I never cared for it either. I have memories of cold oatmeal that I gave to my sister because I just could not eat it. Anyone who knows me will tell you I eat anything....mainly that was the way I was brought up. It does seem a contradiction to bow my head and thank the Good Lord for the food and then turn up my nose at it afterward. So I have learned to eat just about anything. Having said that...... I will use that as a disclaimer for these experiments.

I continue to poach my egg in my oatmeal in the morning...and sometimes I add 2.5 or 3 ounces of ham that I sliver then brown in a small skillet with slivers of onion....or/and mushrooms or/and bell peppers. I just lay these on top of my oatmeal/egg. It is so good...I add a lot of black pepper and a little salt if I don't have ham. I leave the salt off if I have ham because I have issues with sodium.



I had noticed that when I cook steel cut oats just right it's texture reminds me of browned ground beef so, I got the idea that this might be used as a substitute for ground beef in a recipe that is well seasoned... like taco meat. So yesterday I was cooking for myself only....I made a steel-cut oat...taco. I toasted 1/4 cup of steel cut oats in my small skillet till golden then added taco seasoning (make your own taco seasoning)....I also added a little Kitchen Bouquet...I guess they still make this stuff. I have had this bottle forever. I used this just for color, oatmeal is so pale. I am not so sure that I would do this again... I tasted a little sweetness that I did not want.... it might have came from this. Live and learn!!! I added some veggie broth and turned down the heat and simmered with a lid on. I added more broth as needed and when it was almost done I turned off the fire and let it firm up a bit as it cooled. When it was the right texture I added it to a taco shell with Fat free Cheddar Cheese, lettuce, tomato, onion and some salsa. I liked it. As far as nutrition goes....I am sure that it had less protein...more carbs than the real thing but I have a Grandson that has been a vegetarian for a couple years and I wanted to see if this would work. I thought he might come for a visit this weekend but he is starting college and will not be coming home. I know some of you think I must have too much time on my hands lol....I do !! I love to experiment with foods. I know girls ...I could exercise with this spare time.

Other things this week.....

I made a visit to Social Security this week...I will officially be retired at my next birthday. Definitely a mile stone in life.



And speaking of Birthdays....my drivers license will need renewed this year and I was not sure I would pass the vision test. I have always had good vision at a distance ...and used readers for close work since I was forty something. I noticed when on vacation, while my husband was driving, I had to be close to the signs before I could read them. Funny I did not notice this before...when I am driving around town I can read them perfectly... I guess, because I already know what they say. (Hee Hee) I made an appointment for an eye exam.....and sure enough... I need glasses. And for the first time in my life I will be restricted on my drivers license to driving with glasses. I was fitted this week and will get the glasses next week.

Well that is last week.... My Dear Daughter is coming today for a visit today so it is off the grocery store for regular food. Always a special time when I can spend it with family. Hubby called to tell me his truck will not start...batteries are dead. Don't know when he will get home and please stop and pick up his Rx.

    I've enjoyed reading about your adventures with oatmeal, definitely one of my favorite foods!

Congratulations on your upcoming retirement - a wonderful milestone and something to celebrate!

I hope you like and adjust well to your new glasses. I'm due for a new pair soon and I'm looking forward to getting a new style of frame. They have such lovely frames now-a-days and shopping for them is fun. I've never been able to adjust to bi-focals and so I wear one pair for distance & one for reading.

It's nice you got to spend time with your daughter.

    I like steel cut oatmeal.I buy Bob's Red Mill and cook up a batch that will last me a few days.I follow the directions on the package.I like to eat mine with a little Splenda and cinnamon and I add some raisins if I want to change things up.Thankfully I no longer want really sweet things so that isn't a big concern.I would rather have savory than sweet now.Funny thing about glasses.I used to wear glasses but no longer.I honestly thought I would have problems passing the eye test 5 years ago at renewal but I passed with no problems.I also passed again without glasses last year.Wonder if that will keep up in another 4 years?

    Your steelcut oats experimenting makes me wonder how it might work to add them to soups...... If you have any "spare" too much time on your hands and decide to test a new soup recipe, let me know how it turns out!
