What?! My vegetables have carbs?

Eating enough veggies is rarely my problem. Loading up my salad with a multitude of colorful veggies and even fruits sounds and tastes so yummy. Let's have yellow and red peppers, garden lettuce, mushrooms, tomatoes, carrots, cucumbers. Let's even toss in a few craisens. Now, let's enter that in our nutrition tracker...OMG! My salad has carbs! Who'd have thought!? OK. Back out the craisens. That will help some. Swiss chard has 11 carbs in a cup? That cannot be!

This nutrition tracking is tricky business. We all need to be "nutritionalists." We also need to learn about our own bodies and what works best for our own weight loss and healthful eating.

Interesting challenge, isn't it? emoticon

    I believe the carbs in your salad vegetables are good because of the high fiber which more than compensates for those calories.

    So eat up!!. Those veggies really are O.K.

    Thanks for sharing, yes, I agree this is an eye opener, I have found the same thing while tracking, I usually have to eliminate something because of too many carbs, or sometimes it takes a lot of juggling to get enough of everything else, sometimes I get enough carbs and think all is ok only to discover that I have too many fats or not enough of something else, dear me, yes it does take a lot of planning and juggling to get the right amount, but in the end this tracking tool sure helps one to stay on track and teaches us how to eat healthier. Your salad sure sounds yummy, I can almost taste it now... emoticon emoticon emoticon

    You are so right... living healthy means lots of education. I read healthy living articles from a variety of sights all the time. Almost every day; and I read books on all sorts of topics that are linked to healthy living in some way. Education is the key; but it is sooo worth it. I see other people around me doing fad diets that are dangerous, based on one book by some quack doc. I've tried giving them advice, but they won't listen. I feel so blessed to know good quality information and it all started here on SP.

    I don't worry too much about good carbs like veggies.. it's the breads & other sorts of carbs that I watch carefully. If you're eating lots of veggies, I think you're doing well Edie!

    I never cared for the honeymoon salad--"lettace alone" so have to be careful at salad bars that I am not deteating the purpose.

    Crazy huh? I count carbs too and yes those craisens are loaded with sugar...darn anyway! :)

    The rest of those carbs are the good kind.....whew!

    I agree.. the cards from veggies HAVE to be good carbs. I love fresh veggies during the summer. Ate two cucumbers for lunch today. Yummy.

    Yep they have carbs ! but they are good carbs and essentual for a healthy Nutrition!!

    Go figure! I just found that out when I met with the dietician Tuesday. I was told I could eat all the raw veggies I wanted as well as broccoli, cauliflower and asparagus. I was also told my yogurt, Carb Master, by Kroger stores was a free food because it only has 4 carbs. Carbs are tricky.

    Oh but they are the GOOD carbs - talk about a yummy, healthy way to get carbs! Put them all back! Send me some! That old standby iceberg lettuce has little taste so all the rest is GOOD!!!
