Yummy chicken dinner

So, did everyone make it through the storm ok? We had a few trees down, some power outages, strong winds and heavy rain. Nothing super major. When you live in New England, you get used to drastic weather conditions and changes with the flip of a switch. Hurricanes are usually tropical storms by the time they reach us, but still they are severe enough to do some damage. My heart aches for the people who lost loved ones due to this storm. What a shame :(

I made the most delicious chicken tonight, AND I used my oats in it! I ground up the oats with Fiber One cereal, and mixed in wheat germ, flax seed, salt, pepper and garlic powder. I coated the chicken breast with the mixture and baked it. It was such a big hit. Everyone loved it. Even my husband said after dinner, "Wow, that felt good! Felt HEALTHY" =) The boys loved it too. I also made brown rice, which I NEVER make because I never liked rice growing up. So I was trying to figure out what I could do with it to make it so it wasn't just rice. I mixed in some sweet peas and salt and pepper and that was delicious too. I finished the meal off with garden salads for everyone. Dinner was a success! I always get a little nervous when I make something new, or healthy, because the boys are really picky. My husband will eat anything I put in front of him.

I am looking for some suggestions on what to do with brown rice, if anyone has any ideas! I am new to the brown rice idea... but I really am committed to doing this the right way this time.

I am very excited to be off this week. My boss shut down the shop to get his son ready to move into college. I am a floral designer and work in a flower shop part time. So, when he shuts down, that means there is no work for me obviously. It is good though, because the boys go back to school on Wednesday, so it gives me the next two days to get them ready. I am excited for Wednesday and Thursday. NO one home and I can just soak up the sun by the pool and have a little mini break for myself. I never get "me" time! So I am super excited :)

    REJOHNSON3, I do not like cereal, because of the mush factor. I have an awful gag reflex and a really hard time with consistency. So, I don't eat the fiber one cereal AS a bowl of cereal. I use it to grind up and coat chicken, and I have also coated onion rings with it, and bake, to make a super healthy and tasty onion ring. Thanks for the suggestion on the Chia, I will look for some!

DAS92687, I coated the chicken with egg whites. Works just as well!

    The chicken sounds good - the whole meal sounds good. I know you do not like oatmeal for breakfast and I was wondering if you tried Fiber One with fruit and chia seed for extra fiber. That is what we had for breakfast this morning. Fiber One with banana, strawberries, blueberries, chia seed and milk and it is so good.

    WOW, the chicken sounds FABULOUS !! Did you coat it with egg first, or just roll it in oats/etc?

As far as another idea for brown rice, here's a recipe for slightly spicy Thai chicken that I love. (And DH does, too, even though he typically doesn't love real spicy things.) I always serve it over brown rice.
