Do you find yourself strapped for calories by dinner time?

I do sometimes, so I lean on Spaghetti Squash to get me through. Spaghetti squash is Yellow and Oval and ranges from small to large/Xlarge. They are expensive if you are not buying it from the right grocer.

1 cup of spaghetti squash is only 42 calories!
The spaghetti sauce I use is 90 calories per 1/2 cup.

I buy them small so I can cut them in half long ways, (I usually get 2 cups of Spaghetti out of a small one) and put them seed side down on a microwave safe plate (it's ok if they don't sit flat) and cook them for 8-10 minutes. Use pot holders if you can to pick up a half, and gently scoop out the seeds so you don't scoop out the spaghetti. When the seeds are removed, use your fork to separate the spaghetti strands. They usually remove good up close to the rind, keep scooping until no more strands are on the rind. If the squash is still too firm for your liking, you can just pop it make in the microwave for your desired time. I use 1/4-1/2 cup of pasta sauce of my liking (Ragu garden combination) per cup of squash.

Some people will like spaghetti squash, and some people will not but you can always play with it to see how YOU can eat it! I had so many calories left this evening I had two servings of this dish! You can always peek at my shared nutrition meals. (Warning they are not perfect)

    Great idea - I dedicate part of my Sunday (usually the part where I'm watching some random sporting event) to cutting/storing veggies so that when I get the munchies, I'll have something healthy ready to go. I may have to add this squash to my shopping list...never tried to microwave squash...hmmm!

    NO, I always need to eat more just to make 1200 calories in my day. Finding healthy food with enough calories and protien is my issue.
