It's been a very nice weekend here, with lots of time to play in the kitchen. Yesterday, I baked some whole wheat honey bread (yumyumyum!) and in the midst of reading different recipes, I came across this simple little recipe for homemade peanut butter cups:
Here's how I made mine:
Ingredients (1:1:1 ratio; I used 3 tbsp of each)
- Powdered cocoa (I used dark chocolate cocoa)
- Melted coconut oil
- (Peanut butter for spreading on top)
Mix all 3 ingredients together in a small bowl, put wax paper in a small disposable container and pour mixture on top of wax paper. Freeze for 1 hour. Smear a thin layer of peanut butter on top & EAT! (will begin to melt at less than 75 degrees Fahrenheit due to coconut oil, so keep refrigerated or frozen)
oh, my word, it was soooooooooooooooooooooooooo good & satisfying!!!!!!!!
...and speaking of peanut butter, a great discovery was made at my local health food store today...
Yes, yes, it's true. 2 tbsp of peanut butter for only 45 calories! You just add 1 tbsp of water for every 2 tbsp of peanut butter powder. I actually added just a little more than a tbsp of water & also added a pinch of Stevia for sweetening, because it's not as sweet as your average store bought PB. Really good stuff!!
And then, this afternoon I made another frittata concoction. I can't wait to try it!
