I haven't posted a blog for awhile, so I figured I probably should update.

I've been fairly good with my eating, and generally fit into my exercise and food requirements, but I feel very stunted lately. I haven't really been getting the rush I used to out of my exercise, and I'm getting bored with my lunchtime salads. My knees have been a bit sore lately (I usually climb a small mountain in my city 3x a week during lunch breaks and I bike to work), so I've been taking a more gradual path up the mountain that takes me a bit longer.

This is generally what I eat every day:

Breakfast: Smoothie (frozen fruit, Liberte non-fat organic yogurt, 1% milk, and sometimes some protein powder)

Late morning snack: 1 serving of all bran buds with skim milk and usually a small spoonful of jam for flavour

Lunch: a big salad with lots of vegetables.

Late afternoon snack: mango or a nectarine or something

Supper: changes every day, but usually a serving of whole wheat grains (brown rice/pasta/bread/couscous, etc.), meat, beans or tofu most nights, and more vegetables.

I love my morning smoothie, and I love my supper and snacks, but I am getting bored with salads. Anyone have any suggestions for vegetable-centric meals that require little to no work? I need something I can make up quick and bring to work.

    For quick lunches I sometimes buy those frozen lunches and add additional frozen vegies on top. It's my 'in case of emergency' kit- to avoid going out to buy crap at the last minute!

    Sounds like you're doing great! I usually make some pasta with lots of veggies casseroles and then re heat them at lunch time. Just added you back as a spark friend btw!

    I wouldn't worry about the protein; you're probably getting plenty (spark's recommendation is set quite a bit higher than everyone else's recommendation).

If you have access to a microwave, veggie burritos are good. Mix equal parts frozen corn with beans, add a tablespoon of salsa, mix, and nuke for 30 seconds. Wrap it up in a tortilla, put more salsa on top, nuke for another 30-60 seconds until hot.

The tabbouleh salad I made (and blogged about) is also good. Or a quinoa/black bean/ veggie salad is good -- that one I usually just wing. The dressing is similar to the tabbouleh dressing -- pepper, lemon juice, olive oil.

    Oh! I forgot to mention I have a hard boiled egg every day with breakfast, and protein powder in my smoothie if not.

    I think that you should need something with more protein =P not necessarly meat, but maybe cheese or something like that.

I don't have an idea for an easy vegetable meal but did you try to mix & match meal planner on this website? I found it very interesting and maybe it could give you ideas.
