Cauli Salad

Iíve developed a new love for cauliflower. Iíve been experimenting with different ways of preparing it, and this one that I call Cauli Salad is so good that I had to share it. Itís specifically for those following a plant-based w/ no dairy, but I think anyone will enjoy this:

The ingredients are:
Cauliflower Ė 1 large head
Non-dairy mayo (Vegenaise), 3 tbsp
Onion, raw, 1 large, chopped
Celery, raw, 1/4 cup, diced
Splenda or Truvia (or any no calorie sweetener), 1 tsp
Yellow Mustard, 1 tsp
Cider Vinegar, 1 tbsp

Cut cauliflower into small florets or crumble with your hands and steam for 5-7 minutes. Let cool. I usually place in the freezer for about 3-4 minutes, which cools it quickly. Then completely mix all ingredients. Garnish with fresh parsley and chives. This serves about 6 people.
