Okay, so I had my doubts about this eating healthy thing. I mean, I didn't get this way by eating healthily, did I? So obviously, when the subject was broached that on top of adding more activity to my daily life, I not only had to cut back on some of my favorites, I had to actually (ack!) make healthy substitu...titu...titu...okay spit it out, Lisa...substitutions (sigh!)
Well, I had had another hard day, so the only thing on my mind was comfort food, which by nature of its very name, meant creamy, fattening, and often unhealthy. But wait, maybe there was a way to, as Emeril would say, kick it up a notch. Alright, so I experimented, and waddya know -- it was good!
Lemme 'splain, Lucy!
I love curried chicken, but not just the ordinary quick fix, mine every so often had to have the added coconut milk. (How many of our die-hard dieters out there had to clutch the pearls at that one?). I also love butter beans, which are actually good for me -- not fattening, full of fiber and protein (okay, point, mine!) So instead of the artery clogging coconut milk, I added the butter beans and let the chicken stew slowly so that the beans could kinda cook to right before mushy, to add some body to it.
Honey, it was so good, I went back for seconds, and have some left over for lunch tomorrow! See, I could go back for seconds, 'cause the calorie count was low enough to allow that. (Insert snicker here...)
Oh, but wait, there's more! To add a three-four to the one-two punch of flavor and nutrients, I had it over brown rice! Man, I'm firing on all cylinders today!
Flavor, nutrition, satisfaction...I could get used to this eating healthy thing!
