Just had to share! I have never tried making my own guac at home. I actually only started eating it about a year or so ago. Now I'm in love with it. It's high in fat, but it's the good fat they say. I actually went over on my fat intake for today b/c of the guac!! Only by 5 pts so not too bad.
My first time buying avocados I got some that were hard. I ended up throwing them away b/c I didn't know how to get them ripe. I was at Kroger Sunday and saw Ripe Avocados! I grabbed 2! I already had a packet of this Guacamole Mix by Concord Foods. Is sold right by the Avocados.
So last night I made my first batch.
1/4 of the packet of guac mix seasoning
1-2 tbsp of diced red onion
1-2 tbsp of diced tomatoes
1 tsp lime or lemon juice
Take a fork and sort of mash up the avocados while mixing in the other ingredients. I like mine a little chunky b/c that's how it's served at La Parilla where it's Oh So Amazing! Refrigerate for 1 hour or until chilled.
*The pkg of seasoning calls for 2 avocados for 1 pkg but I used about 1/2 the pkg and it was a bit salty for my liking so I decided to only use 1/4 pkg per avocado in the future!

I had it with chicken fajitas which is my go to meal once a week. It makes 1 meal for me plus 1-2 meals of leftovers! Sometimes I will make breakfast fajita/soft taco with some of the leftovers by adding in 1 scrambled egg. YUM-O!
Well I've shared my new recipe and even though it's not exactly on the low fat side...It won't make your side fat! LOL Enjoy!
