I am having a new friend over for dinner tonight. I thought I would share the menu I am planning to make.
For the first course I am making marinated mushroom caps that I will stuff with Italian sausage and mozzarella. Then I sprinkle with grated parm and put them under the broiler just long enough to melt and brown the cheese. With them I will deep fry (I KNOW - NOT GOOD!!!!) dill pickl spears and green olives.
The main course will be my own idea of crab, shrimp, and coconut cury, served on a bed of seasoned brown rice. With that I will have toasted garlic bread and steamed asparagus.
We will end with a chocloate mousse which is very light as it is made with fat free jello pudding, skim milk, and fat free cool whip.
My friend is even coming over early so she can watch me make all this stuff.
It should be a fun afternoon and evening.
