I love the Fire Roasted Artichokes at Cheesecake Factory served with Garlic Aioli. I decided to make artichokes for dinner, and to try to make a healthier, lower calorie version of the sauce which would hold the flavor. I came very close. Here's the recipe I found by way of Google. I've added some modifications, like the use of sea salt and white pepper to taste:
1/4 to 1/2 Cup Greek Yogurt
Juice of 1 lemon
1 to 3 cloves of chopped garlic
Combine ingredients in a ramekin, small bowl or coffee cup, and set aside for one hour. Serve at room temperature. The longer the recipe sits, the more of the garlic and lemon infuse the yogurt, resulting in an aioli close to that at the restaurant.
I found a version which calls for roasting the garlic first. I'll try doing that sometime, too.
