Low Fat Homemade Granola

A recipe a friend shared with me

Low Fat Homemade Granola

3 Cups Old Fashioned Oats ( Bob Mills Gluten Free )
1 Cup Unsweetened Coconut
1 Cup Chopped Almonds
1 tsp Cinnamon (adjust to taste)
1/4 cup honey
1 tsp vanilla
1 Cup Dried Cranberries

Combine oats, coconut, almonds & cinnamon in a bowl.
Warm the honey in microwave and add vanilla.
Pour that mixture over the dry ingredents and mix well.
Pour the granola on a greased baking sheet, and bake in a 350 degree oven for 15 mins. Remove, mix well and return to the oven for 2-3 mins until the entire batch is golden brown. Remove and add the dried cranberries.
When cool, store in an airtight container, or package in snack sized zip bags for a ready to go snack! ENJOY!

Checked my pantry and need to get the coconut!!

    Sounds good! I worry about the sugar though, due to diabetes... I wonder I could use to help that??!!
