E2 Diet - Day 4

6/2 Day 4 menu day.

B - Strawberries & whole grain Toast - We had breakfast out. Pancakes w/ pecans and a banana with reg syrup. I probably should have slices up some strawberries and just ordered toast. Oh Well.

L - Green Leafy Wrap w/Stir Fry - Skipped lunch. Depressed - found out I need a 3rd surgery to get rid of the basil cells in my back. When will they get it all. Went outside and planted my pepper plants. Did some yoga and felt a lot better, just not hungry.

D - Chalupas & Salsa - What an experience. Crisped up the tortillas. Spread on the bean spread, tomatoes and jalapeņo pepper. I was going to add an avocado, but it had gone bad. (bummer). Put the chalupas in to broil for 5 min. Then chopped up a slice of onion and checked the chalupas. Oh no - there were flames. One chalupas was on fire, so I blew it out. Thought I would have to call E2 team with Rip to rescue me. The sides on 2 were a little charred, put I ate them anyway. (I love marshmallows charred too) They were really good inspite of the blacken part and they were filling.

Dessert - Lemon Sorbet & Blueberries - I had the left-over E2 Lime Mousse with a strawberry on top. Yummmm. Better then the 1st time.

What a day! When I have a bad day, I have a BAD day. Tomorrow is a new day. emoticon

    Yes sometimes you got to make the best out of a bad situation. LOL

I'm getting my E2 book out and finding these recipes...they sound yummy

That is funny (glad you didn't burn the house down) you had a fire, blow it out and then ate
