6/1 I actual did Day 3 (on menu) as day 3. Found a different way to cook Brown Rice - fry it in a hot pan then pour water on it and boil uncovered for part of the cooking process. This gives it a nutty flavor.
B - Simple Cereal Bowl - Had Cheerios & Pumpkin FlaxPlus Granola with a banana and rice milk.
L - E2 Basic Open Face Sandwich w/Hummus - I only used 1 slice of bread and subbed romaine for the arugala without sprouts. The lemon juice on top was really flavorful. It was so simple but delicious.
D - E2 Basic Stir Fry over Brown Rice. I used a spray of Pam with butter flavor. Next time will use a bit more oil rather then Pam because the carrots burnt a little. It also needed more liquid maybe a sauce. The sauce I used cooked up into the veggies. But it did have a good flavor with the nutty rice. (I'm still getting use to my stove. I think the burners are to hot and the oven is too low in temperature.)
Desert - Sliced Apples w/Lemon Juice. I added dried cranberries to it. Very good.
I sure am getting enough to eat.
