Giardiniera

I stopped into the Dollar Store to pick up batteries for my grandboy. Had to look around of course. I saw a small 11.6 oz jar of Giardiniera. I personally had never seen it before. I like my veggies and this had only quality ingredients.
Well I liked it a lot, so I made up my own batch. Here we have no cooking, good carbs, raw, no sugar or fat.
Why hadn't I thought of this before!

    I picked up some of this for DH, and he never ate it. It didn't look appetizing to me :(. But olives in it would tempt me :). So, I can see the veg; what are the other ingredients I can't see? Are there peppercorns in there I see? Garlic? I will google, so no need to respond - save you some precious time. ;0)

    Thanks for telling me about adding olives. I just did my best to mimic the ingredients I saw on that jar.

I've always sliced cucumbers and purple onions, put them in a bowl and cover with vinegar, water and sugar (or sugar substitute).
It's a nice side to lunch/dinner. Yet I never thought of picking up vegetables, not till I saw that jar.

I was at 'Grocery Outlet' every once in a while they have some interesting food item. Once it was Apple and Lentil soup, wow so good, now I make my own and recently 'Dolmas' (rice wrapped in grape leaves) packed in oil from Greece. Wow so good, I went back and bought TWO cases!
