Meatless Day #1

Well my wife's first attempt at a meatless mean for us this week was, of all things, meatloaf.... It turned out horrible, she couldn't stand it. I tried to be very nice in the "what in the world were you thinking" approach and just said making a meatless meatloaf was an "ambitious" undertaking right out of the gate.

We had pasta with red sauce and a salad...

She was really upset it turned out so bad, but I did point out to her that we still had a meatless meal, just not the one we thought we were going to be having.

I can't wait to see what we have tonight.....

    if you're going meatless, start with a bean chili...but a meatless meatloaf? that's diabolical!

    Good luck! I was vegetarian for 5 years, vegan for about a year of that. I'm back eating meat again, but I still much prefer meatless meals. It's fun to get creative, it just takes a bit more effort at first.

I know tofu isn't for eveyone... but, I really love it this way: mix peanut oil, soy sauce, and vegetable oil in a small bowl, use a pastry brush to brush the mixture over slices of tofu. Let it merinate and then bake it in the oven on a cookie sheet until it's brown, flip once during baking.

Also, you can find a recipe for your own bbq sauce (Veganomicon has a great one with liquid smoke in it) and add that to baked tofu, yum.

Another favorite of mine is stirfry - you can do veggie only with brown rice and it's great and filling.
