I am looking for any low calorie meals to make over the campfire? We are going in a few weeks and I would like to try and keep on the Healthy side . Anyone have any to share?

    Make taco meat ahead of time (with ground turkey), add seasoning, black beans, tomatoes w/ green chiles, spray the outsides of whole grain bread w/ olive oil & make pudgy pies over the campfire for your dinner. You can load it up with fresh veggies & dried cilantro. Yum!

    jiffy pop - a good snack without the marshmellows. :-)

breakfast- we take a cast iron skillet and can cook just about anything on it. easy to make everything from scrambled eggs to toast. Just make sure to take an oven mitt, too.

usually we just have sandwiches or something easy like that for the lunch meal.

dinner - often the foil meals as described before. baked potatoes (wrap in foil, and toss in the coals. use tongs and turn often) corn on the cob - cooked in the husk, veggies work best in the foil,

If at all possible, i recommend pre cutting/chopping everything so that it lessens the prep time at the site. Finding the space for "Kitchen prep" can prove challenging.

I know there is more - but my brain is foggy. I haven't been yet this year, and i will have to think some more :-)

    Foil packets are good for camping. If you want grilled, chicken or fish.
Foil packets: chicken breast fillet, onions, bell peppers, garlic, any other seasonings you would like. Wrap and put into the fire, turning a time or two, until it's done. No mess, no fuss :)

    In a piece of tinfoil, put in cut up potatoes, carrots, onions and either a lean ground beef patty or turkey type meat patty. Add pepper and garlic seasoning. Fold up into a little pocket. Cook until meat and veggies are done. Simple, but yummy.
